Sri Lankan cinnamon, also known as Ceylon cinnamon, is often called genuine or sweet cinnamon due to its distinct flavor. Unlike the harsher Cassia cinnamon, Ceylon cinnamon, from the Cinnamomum verum tree, is typically viewed as superior.
Ceylon cinnamon sticks are less common and more expensive, but European pastry chefs prefer them for their delicate taste. A key difference is that Ceylon quills are rolled like cigars and are soft and brittle, while Cassia sticks are harder and woodier.
This organic cinnamon is grown using natural practices in fertile Sri Lankan soils. It is among the finest grades available, just behind Alba cinnamon.
The unique scent of cinnamon is warming, uplifting, and stimulating, and its flavor is sweet and delicious. As a result, it has been used in numerous confectioneries, baked goods, perfumes, cosmetics, beverages, and cordials.
